Can I rename the pillars?

The pillars are fixed on purpose. A shared structure is what makes SOPs findable across teams and brands. Inside each pillar you organize libraries however you like.

What if my business does not have a sales team?

Pillars describe what every business does, not who does it. A solo owner still acquires leads and delivers the work. Empty pillars simply stay out of the way.
